Lately, chicken has been our staple meat for dinner these days at Kacey's request. I pin about two to three recipes a week and actually cook one to two new recipes a month from my boards. I would say it is 50% bust, 50% success. I love hearing from others their go-to recipes for dinner and if their pins were a success. Here are my two favorite chicken meals that I have modified from Pinterest. Quick side note: I only cook chicken in the crock pot (frozen). I hate cooking raw chicken in a pan or in the oven; I just don't like the texture. I like my noodles hard/stiff, and my chicken moist.
Chicken Cesar Sandwiches
-I put about five to six large frozen chicken breasts in the crock pot on low with a large glass of water for about eight hours
-I then drain the water into the sink and shred the chicken in the crock pot
-I squirt about 1/3 of a bottle of Cesar dressing and stir it around with the chicken
-Then I add half of a bag of fresh shredded Parmesan cheese and turn the crock pot to low for about 20 minutes.
I put the mixture onto wheat buns and top it with lettuce, and make tator tots, fries, or serve chips (our favorite chip at the moment is (Tostitos Baked Three Cheese Queso)with it and a steam-in-a-bag veggie. I love serving this when we have people over too vs. the typical BBQ pulled pork sandwich. Of course I serve mini bags of Aldi chips as a side when I do this.

-Again, I cook about four large chicken breasts in the crock pot on low for six to eight hours
-Chop/shred up the chicken and put in large skillet with a few douses of olive oil and some shredded/minced garlic clove
-Cook and low and stir around for about five to ten minutes
-Add in one cup of heavy whipping cream
-Add in about 15 oz of fat free chicken broth
-Add in a box of wheat penne pasta
-Bring to a boil and then simmer for about 22 minutes while stirring on occasion
-Then add in 1 1/2 cups of fresh shredde parmasan cheese and let it melt
-Serve with my favorite Archer's Farm garlic bread (my brother-in-law's fave too) and a steam-in-a-bag veggie, and you have a fantastic meal!
