This egg bake is my favorite breakfast to make for Christmas Eve and Easter mornings. Nothing says holiday brunch like an egg bake! This is also a no-fuss, easy meal to pull together the night before the big morning. I literally tear the ingredients apart vs. cutting them to give it more texture, and I am not a cubed kind of person. I also don't like sausage, so I use bacon as my breakfast meat. This is my tweaked version from a recipe I found years ago online (not Pinterest).
Ingredients:
-One Dozen eggs
-2 1/2 cups of milk
-2 cups of cheddar cheese
-10 slices of bacon (baked in the oven)
-One package of honey ham (lunch meat kind)
-One loaf of french bread (I usually buy a huge loaf at Target and use about 3/4 of it)
This is a recipe that you have to eye ball vs. following the directions to a T. You need to make sure it is moist and not too bread heavy. If it is looking that way, add more milk and eggs.

I cook the bacon at 400 degrees for 15 minutes. While that is cooking, I start tearing apart the French bread and ham and layer half the loaf of bread on the bottom of the pan and half of the ham on top torn apart.
-Once the bacon is done, I use a paper towel to pat off some of the grease and then break it apart.
-I use half of the bacon on top of the first layer of bread and ham, and then top with one cup of cheddar cheese.
-Then break apart the other half of the French bread and put that on top to start a new layer.
-Use the rest of the ham (broken apart) and layer it on top of the French bread.
-Layer the rest of the bacon on top

-I usually have the dozen eggs and 2 1/2 cups of milk whisked together while the bacon is cooking
-Pour the egg/milk mixture on top of the two layers of bread, bacon, and ham
-Top with the last cup of cheddar cheese and cover with tin foil
-Store over night in the fridge
-Bake for one hour at 350 degrees covered, then bake for another 5-10 minutes uncovered if it is not looking crispy on top.
I like to serve mine with Mango Lemonade (or mimosas if I am in the mood) and hash brown hot dish! I get my Mango Lemonade from Whole Foods since I can't find it at Target or Cub. Watch out, it is addicting! We drink it all year round! I stock up when they are $1.00 a piece.
